What is Arabic booza?
Booza is the classic ice cream of the Arab world. It’s traditionally made with mastic and sahlab, then pounded with a pestle rather than churned, which gives it a dense, elastic texture unlike any ordinary ice cream.
Many people know it as Shami booza. If it’s your first time, start with mastic or pistachio, then try our booza rolls with qishta.
